What is Winter Squash?

Winter squash is a term used to describe a group of squash varieties that are harvested in the fall and stored for winter use. Unlike summer squash, which is picked while still immature, winter squash matures fully on the vine, which allows it to develop a thick skin and denser flesh. This not only extends a squash’s shelf life but also enhances its flavour, making it a favourite ingredient in many fall and winter recipes.

Types of Winter Squash

At Lennox Farm, we grow a variety of winter squash, each with its own unique flavour and culinary uses. Here are a few favorites:

  • Butternut Squash: This pear-shaped squash has a sweet, nutty flavour that is perfect for soups, roasted dishes, and even pies, quick breads, and muffins.
  • Acorn/Pepper Squash: Recognizable by its ribbed exterior and green color, acorn squash is mildly sweet and delicious when baked or stuffed.
  • Delicata Squash: This oblong, striped squash is has a thin, edible skin and is very easy to prepare.  Delicata squash is sweet and creamy and best enjoyed roasted or stuffed.   
  • Spaghetti Squash: With its unique stringy flesh, spaghetti squash is a fantastic low-carb alternative to pasta, perfect for a variety of dishes.
  • Kabocha Squash: This Japanese squash variety can be green or orange. It is known for its rich, sweet flavour and creamy texture, making it ideal for soups and curries.
  • Stella Blue: This skin on this squash is a light blue/grey colour and it’s flesh is deep orange in colour.  Stella Blue has a dry, flaky texture and nutty and sweet flavour.

Winter squash contains beta-carotene, a powerful antioxidant.  Winter squash is high in vitamins A and C, potassium, and dietary fiber.
